OUR COMPANY
Welcome to Owl Man Distillery, where every bottle begins with a story of ambition, craftsmanship and Macau.
Our journey began during the COVID-19 era, when our founder, Dan — an airline pilot with a long-standing passion for craft beverages — began experimenting with distillation from a small balcony in Macau. What started as curiosity soon became a much bigger vision: to create exceptional spirits with a distinct sense of place.
From those early beginnings, Owl Man Distillery grew into Macau’s first licensed gin distillery, built on persistence, innovation and an uncompromising approach to quality.
As the distillery evolved, so did our ambition. Alongside our award-winning gins, we began developing premium ready-to-drink cocktails — combining the craftsmanship of a bar-quality serve with the ease and consistency of a beautifully finished bottle.
Today, our spirits and cocktails are created for hotels, restaurants, celebrations and memorable moments across Macau and beyond. Every recipe reflects the same philosophy that started it all: thoughtful ingredients, distinctive flavour and meticulous craftsmanship.

Our Macau Original Gin is available in a range of formats, from 50ml miniatures to larger bottles for hospitality, gifting and retail.
For bespoke requirements, custom sizes or tailored gin experiences, our team is happy to work with you to create something uniquely suited to your needs.
TAKE A SIP OF OUR STORY
When deliberating our distillery’s name, we wanted the magic of Macau to shine through. To achieve this, we took the Mandarin pronunciation of Macau - Àomén (澳门) - and added a lot of imagination with a splash of creativity.
The result? Owl Man.
And if you play with the name a little more, “Owl Man Gin” -
Àomén jiàn (澳门见) - carries another playful Macau connection, sounding like “See you in Macau”.
A name made to carry a little piece of Macau wherever it goes.
At the heart of our Macau Original Gin is one of the city’s most recognisable symbols — the lotus flower.
Carefully incorporated into the gin’s signature botanical profile, the lotus pays tribute to Macau’s heritage and gives the expression a distinctly local identity.
Elegant, symbolic and unmistakably Macau, it is a gin created to carry a little piece of the city in every pour.

DAN MCAULAY
FOUNDER
Dan McAulay is a airline pilot from New Zealand. Throughout his life, Dan has lived on almost every continent but chose to settle in Macau in 2010.
Through Dan’s passion for learning and expanding his technical skills, in 2019 his curiosity sparked the colossal idea to start a craft distillery. And so, Owl Man Distillery in Macau was born.
Dan has a background in electronic, this expertise allowed us to develop one of the most advanced and hi-tech craft distilleries in the world. Through our creation of bespoke hardware and automation software, Owl Man is able to craft the best possible spirits with repeatable accuracy to ensure the perfect sip time and time again.
REBECA FELLINI
CO-FOUNDER/HEAD DISTILLER
Born in Brazil, Rebeca has been living in Macau for more than 20 years. She has a deep passion for language and culture which makes her the perfect person the help create something truly local.
Thanks to her respect and understanding of various cultures, Rebeca has enabled us to bring balance to the culturally complimentary flavours that Macau is all about.
Rebeca has had a huge influence on the direction of the recipe development and is now the head distiller at Owl Man.
